Saucey Cheesy Toasties

Ages: 10+

What You’ll Need:

  • 2 tablespoons of butter
  • 1 cup of grated cheese
  • 1/4 cup of chutney
  • 1 tablespoon of grated onion
  • 1 tablespoon of tomato sauce
  • 1 tablespoon worcestershire sauce
  • 6 thick slices of bread

Method:
Turn the grill on high. Melt butter in a small pan, stir in cheese and chutney. Add onion, tomato & worchestershire sauce. Stir mixture.

Place bread under the grill and lightly toast one side. Spread the cheese mixture on the untoasted side. Place the toast with cheesy spread under the grill until it is bubbled and golden. Serve immediately

Hot Chocolate

Ages:10+

What You’ll Need:

  • 4 white marshmallows
  • 4 pink marshmallows
  • 2 tablespoons of cocoa
  • 3 tablespoons of sugar
  • a dash of salt
  • 1/2 cup of hot water
  • 2 1/2 cups of milk

Method:

Place cocoa, sugar and salt in a saucepan, add hot water and stir well. Heat on stove until boiling, stir constantly. Turn heat down, and add milk. Keep stirring while heating the milk – but don’t boil the milk. Once heated pour mixture into 4 mugs. Place one pink and one white marshmallow on top.

Coconut Ice

Age: 8+

What You’ll Need:

  • 4 tablesppons cream cheese
  • 3 cups of icing sugar
  • 1/2 cup of coconut
  • 2 teaspoons milk
  • 2 drops of vanilla essense
  • 2 drops of red food coloring

Method: Grease a square tin. Beat cream cheese until smooth, add icing sugar and milk continuing to beat slowly. Beat in the vanilla and coconut – the mixture will become very stiff. Place half the mixture in the greased tin, mix the red food coloring in with the remaining mixture. Spread the pink half of the mixture over the top of the white half.

Chill the coconut ice in the fridge until firm and then cut into small squares.

Lolly Cake

Ages: 5+

What You’ll Need:

  • 100g of melted butter
  • 1 packet of malt biscuits
  • 1/2 a tin of condensed milk
  • 1 pack of fruit puffs, marshmellows or eskimos – cut up into bits
  • Dried coconut

Method:

Crush biscuits very finely. Chop up the lollies. Combine with half a tin condensed milk and mix well. Roll the mixture into a log and roll it in the coconut.

Place it in the fridge and cut into slices when hard.

Oaty Nana Cookie

Age: 10 year +

What You’ll Need:

  • 1 cup sugar
  • ¾ cup butter
  • 1 egg
  • 1 cup mashed bananas
  • 1¾ cup oats
  • 1½ cups flour
  • ½ teaspoon salt
  • ¾ teaspoon cinnamon
  • ½ teaspoon baking soda

Method
Preheat oven to 180° C and grease a cooking tray.

Cream together the butter, sugar and egg. It will become light and fluffy. Stir in the mashed bananas and the oats. Combine the remaining dry ingredients and add to creamed mixture. Blend the mixture well.

Use a teaspoon and measure out the cookie dough onto the greased tray. One teaspoon makes one cookie.

Bake for 15-20 minutes. Allow to cool slightly before serving.

Scrambled Eggs

Ages: 10+

What You’ll Need:

  • 3 eggs
  • 1/4 cup of milk
  • 1/4 of a teaspoon of salt
  • a sprinkle of pepper
  • parsley

Method:

Break eggs into a saucepan and add milk, salt and pepper. Beat the egg mixture well. Place on the stove over a medium heat and stir constantly. As the mixture starts to thicken reduce the heat and keep stirring. Be careful not to over cook – it should be a little runny.

Serve with toast immediately.

Apple Crunch

Age: 12+

What You’ll Need:

  • 1/2 cup of butter
  • 5 apples
  • 1 cup of flour
  • 3/4 cup of brown sugar
  • a dash of salt
  • 1 teaspoon of baking powder
  • 1 egg
  • 2 teaspoons of cinnamon
  • 2 teaspoons sugar

Method:

Preheat oven to 180 degrees celcius. Grease a flat baking dish.

Melt butter in the microwave and set aside to cool. Peel, core and slice the apples and place them in the baking dish. Sift flour, sugar, salt and baking powder into a mixing bowl. Add egg and the melted butter to the dry ingredients, mix well using a fork. Spread the mixture over the apples and sprinkle cinnamon and sugar on top.

Bake for 40 mins

Fudge-ilicious

Age: 10+

What You’ll Need:

  • 500g cooking chocolate
  • 1 tin Condensed Milk
  • 1 teaspoon vanilla essense
  • 1 cup of chopped almonds

Method:

Break up chocolate. Combine chocolate with condensed milk and vanilla essense in a saucepan. Place over another saucepan that is half filled with water. Heat the double saucepan and stir continuously as the mixture melts. Add the chopped almonds. Line a small slice tin with baking paper and pour in the fudge. Place in fridge until cool and then cut into bite sized pieces. Store in fridge.

Apricot & Peach Custard

Ages: 10+

What You’ll Need:

  • 1 cup of tinned apricots
  • 1 cup of tinned peaches
  • 2 tablespoons of brown sugar
  • 2 eggs
  • 3 tablespoons of white sugar
  • 1 1/2 cups of milk
  • 1 teaspoon of vanilla

Method:

Place 3cm of water into a large roasting pan. Place the roasting pan in the oven and set it to bake at 180 degrees celcius. Drain the peaches and apricots and place in a shallow baking dish. Sprinkle the brown sugar over the fruit. Place eggs, white sugar and vanilla in a bowl and beat with a mixer. Pour the mixture over the top of the fruit. Set the baking dish into the roasting dish with the 3cm of water.

Bake for an hour.

Summer Muesli

Ages: 2+

What You’ll Need:

  • 1 cup dried apples
  • 1/2 cup of dried coconut
  • 1 cup dried apricots
  • 1/2 cup sliced almonds
  • 1/2 cup of dried mango
  • 1/2 cup dried cranberries
  • 1 cup raisins
  • 1/2 cup of sunflower seeds
  • 2 cups rolled oats
  • Honey (optional)

Cut dried apples, apricots, mangos and cranberries into small pieces. Place chopped fruit into a large bowl. Combine with remaining ingredients. Mix gently.

Serve with yoghurt and a teaspoon of honey.

For Toddlers:
Help from a grown up required to chop fruit and measure ingredients. Your toddler will enjoy placing the ingredients in the bowl and combining the museli.
